Discover Our Chilli Crisp Difference
Infuse every meal with ‘YUM!’
It’s no secret that our epic crunchy chilli condiments combine bold flavours with unmatched texture to bring the magic of an umami taste.
But what is it exactly that makes Uu-mah-mia condiments so different?
The unforgettable flavour of sun-drenched chillies, layered umami spices, and a mouthwatering crunch that delivers a burst of smoky, earthy, and slightly sweet notes to your tastebuds.
There’s no doubt about it: Each jar is a little piece of Alice Springs magic.
The recipe? That stays with Aunty Rae.
Sun-soaked & Sublime
What we can share is that the unique umami flavour is infused with the world’s oldest landscapes. The key difference lies in how and where our chillies are sun-dried – in Australia’s Red Centre.
Bathed in the intense
desert sun
The arid climate of this region is truly exceptional. Significant temperature fluctuations between hot days and cool nights contribute to the development of complex and concentrated flavours. Scorching summers, low frost winters, and low rainfall are the secrets behind our uniquely flavoured chillies.
The chillies undergo a transformation, intensifying their heat and enriching each one with a rich and robust flavour profile.
Bringing the Territory to your table
Born in the heart of Australia, Uu-mah-mia’s crunchy chilli condiments are a love letter to the rugged beauty and resilience of Alice Springs.
Despite the challenges of producing and distributing from such a remote location, we’re passionate about sharing the unique flavours of our home with you.
Heat? Check. Crunch? Check.

Got questions?
Who are we?
Raelene is a fourth-generation Territorian who was born in Darwin and has lived in Alice Springs for the past 30 years.
Her partner, John is an original Sydneysider who has lived and worked in PNG and the NT for decades.
We share a very large culturally diverse blended family and have been very lucky to have travelled extensively overseas and throughout Australia.
What does small batch mean?
Small batch means we create each Uu-mah-mia jar with the kind of attention that makes the most delicious kitchen helper you’ll taste. We don’t manufacture in large bulk quantities. Please be aware that sometimes we sell out in peak seasons. Mothers Day and the Christmas season are super popular, so get your order in early!
What’s the best way to use Uu-mah-mia?
Start by adding it to your favourite dishes. With just one teaspoon enhance dips, dressings, drizzles, glazes, marinades, sauces, spreads, stews, stir fries, salads and soups. Don’t be afraid to just eat it off the spoon!
Why do we use canola oil?
We use 100% Australian canola oil because this oil is neutral and helps carry the umami flavours and spices.
